看著英式 mix grill (再戰什扒) 面層的煎雞蛋, 我突然想到雞蛋的不同煮法.
大家喜歡怎樣烹調的雞蛋? 烚蛋, 煎蛋... 還是炒蛋? 當外出吃早餐, brunch 或是 all day breakfast 時, 侍應生往往會問: "How would you like your eggs done?" 這個時候, 應該怎樣回答?
- Boiled egg (hard boiled egg, medium boiled egg, soft boiled egg)
烚蛋 - Poached egg
水煮蛋 - Fried egg (sunny side up, over easy, over medium, over hard)
煎蛋 - Scramble egg
炒蛋 - Omelette

"太陽蛋" 是 "sunny side up". 而 "反蛋" 就是 "over easy", 至於 "easy", "medium" 及 "hard" 則是形容 "反蛋" 蛋黃不同的熟透程度.
同樣, 烚蛋 "boiled egg" 蛋黃熟透程度也有不同說法. 蛋黃全熟的烚蛋叫 hard boiled, 蛋黃半熟叫 medium boiled, 而蛋黃仍然是流質的就叫 soft boiled.
